Chia Seed Pudding

I think what the world is missing right now is a good breakfast. There are only so many ways that you can cook an egg, and we are TIRED! I have been playing around with more nutritious and filling options for breakfast. I have a few dietary restrictions that make my options very slim, but I feel like I’ve got a handle on things now! Below is a staple that has been shared on every platform imaginable. Everyone at this point knows what chia seed pudding is. This recipe, however, will yield the best version of chia seed pudding you might ever eat. 

I like to top it with fruit, granola, pumpkin seeds, and sometimes dark chocolate for a bedtime snack!

Ingredients

2 cups vanilla (unsweetened) almond milk

½ cup chia seeds

2 tsp vanilla extract

2 tbs dark maple syrup 

1 tbs turbinado sugar

Directions

  1. Whisk together all ingredients in a medium-sized bowl

  2. Once completely combined, let the mixture sit for 5 minutes

  3. After the 5 minutes, whisk again and repeat the timer

  4. Following the second timer, whisk once more, cover the bowl and then place the bowl in the fridge overnight

Whisking the ingredients several times makes sure that there aren't any lumps of chia floating in your milk, or even falling to the bottom. Without the extra mixing step, your texture is a lot like baby vomit – I do not recommend!
