Cinnamon Roll Bites

I want to say “you guys begged me for this recipe”.. But the reality is that like 4 people asked me for it haha. I was in a sweet tooth mood a few nights ago and accidentally conjured up one of my favorite snacks from the early 2000s from McDonald's. What I really wanted was cinnamon rolls but I was already cozy in bed and dreading having to roll out a dough, slather on the filling, roll them up, blah blah!

Instead, these were actually SO much better omg. I am surprised they aren't finished yet. 

Ingredients  

1 ½ cups warm water (105-110 F)

1 tablespoon active dry yeast (I prefer SAF Traditional Active Dry)

2 tablespoons granulated sugar

1/2 teaspoon salt

3 cups all-purpose flour

¼ cup of heavy cream 

1 tsp vanilla extract 

 

Sugar Topping:

1/2 cup granulated sugar

1 tablespoon ground cinnamon

1/4 cup butter melted

Icing:

1 tablespoon butter melted

1 cup powdered sugar

1/2 teaspoon vanilla extract

1-3 tablespoons milk

Directions 

  1. In a large measuring cup, stir together the warm water, yeast, and sugar. Let stand for 10 minutes. It should be foamy.

  2. Pour the mixture into a stand mixer bowl and mix in salt and flour

  3. Knead dough for 5 minutes minutes

  4. Cover the bowl with plastic wrap and let the dough rest for 10 minutes

  5. Heavily grease a 10-inch cast iron skillet or baking pan with butter

  6. Divide dough into 20-24 small to medium round pieces and place the dough balls into the prepared skillet.

  7. Cover with plastic wrap and a heavy kitchen towel and let it rise for 20 minutes.

  8. Preheat oven to 350 degrees

  9. In a small bowl, combine the heavy cream and vanilla extract. Pour it over the poofed dough balls

  10. Bake for 20 minutes

  11. While baking, combine sugar cinnamon and melted butter in a small bowl

  12. In a separate bowl, combine butter, milk, vanilla, and milk. Whisk briskly for 2 minutes to fully combine

  13. Remove the rolls from the oven and while still hot, use a fork to poke holes about 2 inches from one another in the rolls

  14. Sprinkle the sugar topping, then slowly the icing on top. 

  15. Let it sit for 2 more minutes before digging in and enjoying every single bite!
