Disaster Turned Tasty

This entire week was one for the books and I am more than happy that it is coming to an end. From having my tires blow out on the interstate to receiving several wrong packages from Wayfair, and then redeeming myself by finding a hidden biscuit recipe from a local breakfast sandwich shop – Id say that I am wiped out. 

On Sunday, I left my house around 7am and headed West to a sample sale before I hit the accelerator pedal and realized that my car was not picking up speed. Soon after, I headed on to the interstate and tried again only to be met with a low tire pressure alert. This surprised me given that I had FOUR new tires placed on my car less than 5 days prior. Before I knew it, there was smoke, I was swerving, I heard a large scrape and I pulled over to a safe spot.

The snow was coming down heavily and I quickly peaked out of my driver's side door to spot the damage. Rim, bent. Wheel, pretty much melted and gone. 

I could not do anything but scream for the first 10 minutes. I never have car issues. Ever. 

I called the interstate assistance line who sent the nicest man to check on me, and then an even nicer gentlemen to escort me to a nearby tire shop. We chatted about trucks, but I really was trying to see how profitable it was for him to come and pick me up on the side of the road in the middle of the day. My mind raced with questions like “do you have to bid?” or “what is the insurance cost for a vehicle this large?”.

A few days later, my baby is back home and thriving with me. If this experience taught me anything, it’s that I am not soft. When I got married the first time in 2018, I moved into a rural area of Texas almost immediately and I lost so much of my survival mentality. I still watched my back, but I stopped locking my doors. As the years have went on, I always secretly wondered that if I lost my resourcefulness that I learned after years of living in impoverished conditions, would I become a target? My nervous system is definitely laxed, but does that mean that I become helpless in times of trouble? 

After this past week, I realized that I am in a good place. I have small reminders that force me to think fast, but my day to day life is safe, calm, and most importantly, I feel secure. 

A few days later I found myself in Whole Foods after my nighttime swim class, and I politely asked someone for more options of split peas around the store. This came after intensely staring at a shelf with a single bag remaining of $9 for 1lb of peas. 

The employee walked me over to the bulk section that I briskly walk past every time I visit the store.. And honey my life has changed forever. I literally walked into a Sprouts a day later just to curiously see what the bulk section was looking like in there too. 

Split peas are a great way to incorporate more fiber into your diet, here is my 1lb that I got this week for only $2. Yup! You read that right. With a bag of quinoa, this is literally all I need for a side for my meals all week. 

The next morning, I worked with AI to create the tastiest protein + fiber rich breakfast balls. I plan to upload the recipe next week. They are visually unappealing, but when made right, those breakfast treats will give you something to look forward to before bed every night. 

As a way to tie together the week, I got a lot of homework out of the way, and then I found a secret recipe that I am going to share with the entire world soon, and completely out of spite. 

I got 2 breakfast sandwiches, a biscuit, and a coffee from a local shop last week and spent almost $50 on that meal. If it is crime they want, it is crime they will have! No one robs me when I am half awake and gets away with it. The sausage patties in the sandwiches weren't even organic!! Give me a break! 

Anywho, I returned some library books today, put a snow cover on my car, and now I am trapped inside with nothing to do but read and watch Real Housewives of Atlanta from season 1. There are only so many times that I can spot clean my bathroom. 

*cue the smallville theme music* somebody saaaaveee meeeeeeeee
