Mini Peach Cobblers
It is the beginning summer, so that means that it is the beginning of my obsession for peaches. I get the best quality peaches from Whole Foods, let them ripe for about two days in my warm kitchen, and then get to work. I spent about three weeks searching for the best peach cobbler recipe on pinterest and Instagram. After my search, I have decided that I would be creating my own recipe with much less ingredients than I've seen, but double the deeper flavor. The top is crunchy from the broiling process, the peaches are so juicy and golden. This recipe is absolutely PERFECT and simple enough for beginners.
Serves 4
Ingredients:
Base:
5–6 fresh organic yellow peaches, thinly sliced
1/2 tsp melted butter
1/4 cup brown sugar
Crumble:
1/2 cup salted butter, softened
3/4 cup brown sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
a pinch of salt
1/4 cup coconut sugar
Directions:
Preheat the oven to 350 degrees. In a medium bowl, mix the butter, peaches and brown sugar. Set aside.
In a separate bowl, mix the softened butter, sugar, vanilla, flour, baking powder, and salt until a crumble-like batter forms.
Scoop peach mixture into remekins up to about 1/4 way. Then top with crumble mixture and layer enough (do not pack down) to cover the peaches evenly.
Bake for 30 minutes
Remove ramekins from the oven and then sprinkle evenly with coconut sugar. Return them to the oven and broil for 2-4 minutes.
Remove and serve! These taste great hot, warm, and at room temp.
