Pillowy Soft Banana Muffins
Today is April Fools, but this recipe for banana muffins is no joke!
I saw a video on Instagram not too long ago of a popular chef who was on a boat trip and overseeing how the other catering chefs were making banana muffins in the morning. In the chef’s recipe, she makes a bit of a makeshift buttermilk mix with whole milk and a splash of lime. I was shocked a bit because usually recipe makers would throw in a few tbs of sour cream to get that acidity to soften up the batter. I think that using genuine buttermilk is the way to go here. For me, it’s tough to figure out the right proportion of each to get the right texture, so let’s gloss over that hassle real quick.
The recipe below is so soft, pillowy, and has a perfect amount of sweetness. It only requires 4 ripe bananas, but you might want to add more in your next batch if you’re into more of that earthy flavor.
Ingredients
4 large, mashed ripe bananas
¼ cup olive oil
¼ cup unsalted butter, melted
½ cup (100 g) granulated sugar
½ cup (100 g) brown sugar
2 large eggs, room temperature
¼ cup buttermilk, room temperature
1 Tablespoon vanilla extract
2 cups (250 g) all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
Directions
Preheat oven to 425F and line a muffin tin with liners
Place peeled bananas in a large bowl and use a fork or a potato masher to mash them – bananas should be well-mashed.
Add oil and melted butter and stir well.
Then slowly stir in sugars until well-combined.
Add eggs, buttermilk, and vanilla extract and stir well. Set aside.
In a separate bowl, whisk together your dry ingredients — flour, baking powder, baking soda, and salt.
Add dry ingredients to your wet batter and gently fold in until ingredients are just combined (don't over-mix the batter!).
Portion batter into prepared muffin tin, filling each liner ¾ of the way full.
Bake muffins on 425F for 8 minutes and then reduce the oven temperature to 350 (do NOT open the oven door) and bake another 7-8 minutes on 350F.
Let them cool fully before digging in and enjoy!
